Are you looking for a fresh burger suitable for warmer evenings? Here is one vegan but very tasty!
Ingredients for 4 medium burgers
– 1 280 g jar of Ortoledda Artichokes
– 4 medium boiled potatoes
– 1 ripe avocado
– 1 cucumber
– half white onion
– 4 medium round buns
– Salt and Pepper To Taste.
– extra virgin olive oil to taste
– lemon juice to taste
Do this: chop the artichokes in the mixer and add them to the mashed boiled potatoes. Salt, pepper, form a homogeneous mixture and put it in the fridge for half an hour.
In the meantime, finely slice the cucumber and onion and divide the avocado into 8 parts. In a non-stick pan, heat a drizzle of extra virgin olive oil, form burgers with the dough now compact and cook them to form a delicious golden crust. Make the sandwiches like this: first the cucumber, then the onion, the burger and finally the avocado. Add a pinch of salt, pepper and a few drops of lemon juice.
